Surf n' Turf - the Pubologi way
Make a wonderful beef tartar to share with friends and family. With courtesy of the Head Chef at Pubologi, Christophe Buchet.
For 4 persons you need:
500 grams finely diced, good quality beef 2 chopped oysters 1 finely chopped shallot 1 table spoon shredded parsley 2 table spoons olive oil 1 box garden cress
OYSTER EMULSION
Salt 50 grams oysters 5o grams oyster juice 30 grams parsley 20 grams rusk 1 lemon 2 deciliters cooking oil
RUSK CRUST
10 thin slices of rusk 2 table spoons fried butter
Do like this:
1. Temper the meat and mix with the oysters, union, parsley, salt and olive oil
2. Mix oysters, oyster juice, rusk and parsley. Poor the oil in an even beam.
Finish with lemon juice.
3. Dry the slices of rusk with a little fried butter in an oven set to 140 degrees for approximately 10 minutes.
4. Cut the cress. Place the beef on a plate, string the oyster emulsion around it. Top with with rusk crust and cress.
